The process of cooking ofada rice is not hard but a little bit time-consuming because of its dirtiness and stone content in the rice.

To cook good and stone-free ofada rice, all you need to do is to carefully select the stones from the rice which may take some time.

However, recently the quality of the rice has improved tremendously, and the rice is now sold in small packets with fewer stones and dirt.

Ofada rice appears brownish or slightly reddish containing a mixture of long and short grains, often with a unique aroma.

Before you start your cooking, always make sure that all the utensils and kitchen equipment are clean as well as your kitchen.

Step 1:

The first and most important thing to do before you start cooking ofada rice to make it come out enjoyable after cooking is to select the stone from the rice.

Pick out the stones and dirt from the rice; you must be careful when doing this because ofada rice is known to have stones and dirt.

Step 2:

After picking out the stones from the rice, pour the stone-free rice into a bowl, and wash it repeatedly until the water from the rice is clean.

Step 3:

When the water from the wash rice is clean, transfer the clean rice to a pot and add water (I added 4 cups of water).

Add the amount of water that will cook the rice till it’s soft and chewable. Cook on a medium heat for about 12-13minutes

Optional; do not cover the pot, so the rice won’t get soft quickly, since you are parboiling.

 Step 4:

After 12-13 minutes, rinse the rice from the water, this is to remove some of the starch from the rice. Rinse until the water runs clean.

Step 5                                                                                   

Pour the washed rice into the pot, add a cup of water, and cook until it is soft. Check on the rice frequently to avoid it being burnt and becoming soggy.

When the rice is fully done (perfectly soft to your taste) take it off the heat, but if there is remaining liquid after the rice is done. You can drain it in a colander.
