Suya is a popular street food as well as a social snack or appetizer at gatherings, parties, and events. Suya is enjoyed by people of all ages except toddlers as the spices in the suya may affect them.

How to Make Suya
Suya is made from thinly sliced meat (beef, chicken, or goat) which is grilled over an open flame seasoned with spicy peanut-based marinade.
The marinade is usually made up of groundnuts (peanuts), pepper, spices like ginger, garlic, and onion powder as well as salt for taste.
Beef is the most common meat used for suya although other meat can be as mentioned above. Some regions or vendors may have their own marinade variations, adding or removing some spices according to their taste preferences.
However, the Hausa people are known for their expertise in preparing and selling this suya in the streets of Nigeria, this is a significant aspect of their culinary tradition.
What makes suya taste stand out is the combination of the spicy marinade and smokiness from the grill which creates a unique taste experience.
Suya is often served with sliced onions, tomatoes, and sometimes cabbage and lettuce. Sometimes a side of yaji, a mixture of ground peanuts, spices, and salt can be sprinkled over the Suya to give it an extra flavor.
Now let me show you the ingredients you will use to make suya that will give a distinctive aroma that will waft through the air.
Ingredients
Here are the ingredients used to make both beef and Chicken Suya.
For Beef:
1. Thinly sliced Beef
2. Suya powder (Yaji)
3. Seasoning cubes
4. Salt
5. Ground dry pepper (if you need it more spicy)
6. Vegetable oil
7. Suya sticks
8. Griller
Before I take you to how to make suya, be aware that some people make use of Yaji which is the suya powder while some choose to use the groundnut-based marinade.
They both have their own distinct and deliciousness when consumed. Whichever one you choose to use I will show you how to use it, meanwhile, I have additional tips here for you on how to make the marinade at home yourself.
For today’s recipe, I will be using the Yaji powder to make this my suya. You can easily buy it from aboki (Hausa people)
Steps on How to Make Suya

Because I am using Yaji for this preparation let me throw a little light on what Yaji does to your suya.
Yaji gives your suya a unique character and flavor and also gives a very good taste to everything you grill.
Now let’s get started;
Step 1
Before you start making the suya powder please make sure all the equipment and utensils you will be using are clean. Because hygiene is very important when it comes to what we eat.
Step 2
Properly wash the beef and slice it into thin fillets, you can do this with a kitchen knife. Then go ahead to put some of the suya powder on a clean dry plate, add seasoning cubes, and salt, mix properly, and set aside. Taste and adjust the seasoning if there is a need for that.
Step 3
Get the clean stick, stake the suya, sprinkle the suya powder on it(both sides), and start grilling. With the use of a kitchen brush rub vegetable oil on the beef before grilling, to make the grilling faster.
Step 4
Grill for about 40 minutes, but for every 10 minutes you need to turn to avoid one side from burning. After 20 minutes you can add extra spices and vegetable oil. Keep grilling for another 20 minutes and your delicious suya is ready. You can serve it with cabbage, onions, and tomatoes alongside pepper to make it more spicy.
How to Make Suya Groundnut-based Marinade
Whether you are living in Nigeria or not, you can still make your suya groundnut-based marinade from scratch instead of buying from a supermarket or Aboki (Hausa) people.
I will show you how to easily make your groundnut-based marinade with these few ingredients;
- Peeled Groundnut (roasted and unsalted)
- Lime juice
- Chili powder
- Ginger
- Onion powder
- Sea salt
- Paprika
Instruction
You will need a food processor or a blender for this.
1. Blend the groundnut in a blender or a food processor until crushed, when it is crushed it will stick to the sides of the blender container. When this happens make use of a spatula to scrape it out, as the motor is still running drizzle in some oil and blend until it forms a thick cream.
2. Add salt, lime juice, chili powder, onion powder and paprika. Mix to combine, and then taste to adjust seasonings.
To use this marinade to make suya just use the steps stated above and replace this with Yaji(suya powder)
