Okra soup is one of the fastest and easiest popular Nigerian Soup to cook. This soup is enjoyed across various regions of the country.
The main ingredients of this Soup are typically okra, meat, fish, palm oil, etc. You can also add any vegetable of your choice.
Apart from okra giving the soup a slimy texture when cooked, it is also a nutritional vegetable rich in vitamins, minerals, and fiber.
Okra is low in calories as well contains antioxidants which are of great health benefit, even when combined with proteins making it more nutritious and satisfying.
How to Make Nigerian Okra Soup
As stated the preparation and cooking of this food is not time-consuming.
There are many variations of okra soup across Nigeria, with different regions and ethnic groups having their own recipes and methods of preparation.
Some versions of okra soup include additional ingredients like a snail, shrimp, crab, locust beans, and vegetables like spinach, pumpkin leaf, hot leaf (Uziza leaf), and bitter depending on your preference.
Okra soup is commonly served with pounded yam, garri (eba), fufu, and even rice, still dependent on your preference.
Before I take to the cooking stage, go through the ingredients you need to make this delicious soup.
Ingredients Used in Making Okra Soup
These are the ingredients I use in making my okra soup; you can include any other ingredients when making yours.
For this particular recipe I will be using Pumpkin leaf as my vegetable, you can make use of Uziza leaf, spinach, or any other leaf that you prefer.

Steps on How to Prepare Nigerian Okra Soup

The steps are very easy and fast, so you spend so much time in the kitchen cooking this soup.
Before cooking, the first thing to do is wash all utensils and equipment that will be used. Make sure they are clean as well as your cooking area because hygiene is key to what we eat.
Let’s get started;
Step 1
Pluck your pumpkin leaves wash them, then cut them into tiny slices and set them aside.
Step 2
Go ahead to wash your okra and slice it or use a food processor to cut it into tiny cuts. When you are done set it aside.
Step 3
Wash your Meat, stock fish, periwinkle, and cow skin into a pot add salt, seasoning cubes, pepper, and onions cover a cook on medium heat. After 2 minutes add water and allow it to cook properly.
Step 4
Check on your meat if they are soft and tender pour in your okra, alongside your crayfish, wash shredded dry fish, and stir. Add your palm oil then cover and allow it to cook for 2-3 minutes (because I love it still fresh).
Step 5
After 3 minutes open your pot and pour in your sliced pumpkin leave, stir, and taste. You can adjust your seasoning here if it is not as tasteful and flavorful as you want, just for 1 minute cover it to cook, and then take the pot off the heat.
Your wholesome pot of delicious okra is ready; you can serve it with any swallow of your choice. Serve when hot/warm and thank me later.
