Before you start your process on how to make oha soup, make sure all utensils and equipment you will be using for this cooking are thoroughly washed and clean.
Then you can proceed to make your delicious soup because hygiene is important when it comes to what we eat.
Step 1
First, you will start by washing your cocoyam till it is sand-free and clean. Then put it in a clean pot with water and cover to boil on medium-high heat for 15-20 minutes till it’s soft.
Step 2
After 20 minutes check on your cocoyam if it’s soft, take it off the heat filter it from the water, and peel the back off. After peeling put it into a mortar with a pestle and pound till you have a smooth and fine paste and set aside.
N/B: you can blend your cocoyam with your food processor to make it faster.
Step 3
Go ahead and cut your Oha leaves. Using your fingers (not with a knife) cut your Oha leaves into small pieces. (Using your hand and not a knife is to prevent the leaves from getting darker before and after being cooked)
Step 4
Start prepping your proteins by washing them into a clean pot alongside your fish and stock fish. Season them and steam them on medium heat till it is properly cooked and done.
Step 5
When your cooked proteins are done, go in with your pepper, ogiri, and ground crayfish then cook for 5-10 minutes.
Step 6
Add your pounded/blended cocoyam in lumps followed by palm oil, cover, and allow it to cook on high heat until all the lumps are dissolved. If at this point the soup is too thick add more water and stir. Cover and allow it to cook for a little bit.
Step 7
After a little while, add your Oha leaves and leave it to cook for 2-3 minutes on high heat. Open your pot and stir to prevent the soup from burning from the bottom.
Taste to know if all seasonings are okay, if not okay you can adjust it here. And turn off the heat.
