Easy Steps on How to Prepare Ghanaian Jollof Rice

Before you start cooking as I will always advise, make sure that all utensils and equipment you are using are properly washed and cleaned, because obviously, we are what we eat. So, hygiene is very important when it comes to what we are eating.
Follow the carefully the steps below to make your jollof rice. This is how I make my Ghanaian jollof rice and it always comes out the best, let’s get started:
Step 1
I started by peeling my onions, ginger, and garlic as well as removing the stalk from my peppers (red bell pepper, scotch bonnet pepper) then went ahead to wash them alongside my tomatoes. After washing cut them into a blender and blend for a smooth paste. Then set aside. Please don’t blend all the onions as I will be using some for frying.
Step 2
Wash your meat, cut it into sizeable chunks, and season it to taste along with your ginger and garlic (blended. Mix the seasoning very well then grill and set aside. I love using parboiled rice, so I will wash my rice once and parboiled for 2 minutes, then rewash and filter (this is to reduce the starch in the rice) and set aside.
Step 3
Put my pot on medium heat; pour in some oil not too much. When the oil is heated, pour in my chopped onions and cook until it starts to get brownish.
Step 4
Add the tomato paste on low heat (to avoid being burnt) and stir using a wooden spoon (or anyone you have) for 5 minutes. Raise the heat to medium and add your puree stir and cook for about 15 to 20 minutes. Make sure you stir continuously to avoid being burnt at the bottom.
Step 5
Add your already grilled meat into the sauce and allow it to cook while stirring it. Once the stew is thick and done remove half the meat stew from the pot and set it aside for serving. Go ahead to add your stock be it chicken or any other) if available, if not available add water, curry powder, nutmeg, bay leaves, salt, and seasoning cubes to taste. Then cover and cook for 3 minutes.
Step 6
Pour in your already washed and parboiled rice, stir, and allow the rice to boil covered with a sheet of aluminum foil. Then reduce the heat and allow it to cook. After 10mins open the rice and stir with a wooden spoon. When is rice is properly cooked remove it from the heat.
At this point, you can add mixed veggies which are optional, and mix for a colorful look. Allow it to rest, then serve it with your stewed meat.
