Ingredients

For the Dough

1. Four cups all-purpose flour

2. One cup cold butter, cubed

3. One teaspoon salt

4. One teaspoon baking powder

5. One cup of cold water

For the Filling

1. Two cups cooked chicken, shredded

2. One cup of diced carrots

3. One cup of diced potatoes

4. One onion, finely chopped

5. Two cloves garlic, minced

6. One teaspoon thyme

7. One teaspoon curry powder

8. Salt and pepper to taste

9. Two tablespoons vegetable oil

10. One cup chicken broth

Let’s get started;

Step 1

Choosing the Right Chicken

Start with fresh, boneless chicken breasts or thighs. You can also use leftover roasted chicken for added flavor.

Step 2

Heat the vegetable oil in a saucepan. Make sure you do so using medium heat.

Add the onions and garlic, and sauté until fragrant.

Add the shredded chicken, carrots, potatoes, and any optional vegetables. Stir well.

Season with curry powder, salt, thyme and pepper.

Pour in the chicken broth and let it simmer until the vegetables are tender and the mixture thickens. Set aside to cool.

Step 3

In a large mixing bowl, combine the flour, salt, and baking powder.

Add the cold butter cubes and rub them into the flour mixture until it resembles coarse crumbs.

Add cold water gradually and keep mixing until a dough forms.

Knead the dough lightly, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

On a floured surface, roll out the dough to about 1/8-inch thickness.
